Each plan sees something different. A free member knows someone is waiting; Gold shows who.

No. All apps are free in every plan. Gold and Platinum only add what helps you meet people.
You go back to Free. Nothing is deleted: your profile, matches and chats stay. Only the free limits return, for example 5 profiles a day.
Only your matches who have Gold or Platinum. With Platinum you can turn on invisible mode and hide your status and last activity while still seeing theirs.
A short message (up to 140 characters) sent together with your like, before you match. It lands in the chat as soon as you both match. Gold has 2 a week, Platinum 4.
Once payments are on, you will be able to cancel any time in the app (Profile → My plan → Manage subscription), and the plan lasts until the end of the paid period. Payment is handled by Google Play, so the cancel button takes you straight to your subscription page in Google Play.
